Lamb in Puff Pastry

Season the fillet of lamb with salt and pepper to taste. Place sheet of puff pastry on a baking tray and layer with chopped garlic, wholegrain mustard and mushrooms. Wrap the fillet in puff pastry and bake at 180 degrees Celsius for about 30 minutes or until pastry is fully cooked. Slice into even portions of 2-3 cm each and serve on a bed of creamed spinach. Drizzle with red wine jus (prepared with Anthony Smook Shiraz) and serve with a portion of roast potato wedges and slow roasted plum tomatoes.
