Warm Asparagus Salad

Bunch of Asparagus spears, trimmed

Bunch of Green Beans, trimmed

5 Courgettes, rinsed and sliced thinly (lengthwise)

4 Patty Pans, rinse and halved

Small packet of Sugar Snap Peas, rinsed

Small bunch of Fresh Mint, coarsely chopped

4 tbsp Butter
-
1 tbsp Wholegrain Mustard
-
1 Garlic clove, finely chopped
-
2 tbsp Balsamic Vinegar
-
Salt and Pepper to season
Blanch the green vegetables in salted boiling water, rinse under cold water. Melt butter, add mustard, garlic and balsamic vinegar. Pour over the greens and toss lightly. Serve with chunks of baguette and a refreshing glass of Anthony Smook Sauvignon Blanc. |
